While we're breathing the air poisoned by all possible kinds of poison, one of the polluters that are blamed for that in Italy is traditional furnace for pizzas. One of the latest decrees issued by the Government is order to pizzerias to strictly respect the limit of cleanliness of the air in the chimney. The restaurant coal-powered barbecues are forbidden.

The control procedure is so complicated that there is a danger from leaving the world without the most famous Italian product - pizzas baked in the wood-powered furnace. The empty space could be filled with the electric stove, but the famous taste will be lost: the real margarita is baked on the bricks. Along with traditional pizzerias, the wood-powered bakeries will also be gone, and they will take famous Italian bread and baked goods with them.

Today, there are 30,000 pizzerias in Italy with annual turnover of up to 500 billion. Over 60% of the Italians consume pizza every day. Pizza making annually takes 135 tons of flour, 7,500 tons of olive oil, 90,000 tons of mozzarella and 45,000 tons of tomato.
