If you still believe that Italian ice cream is the best, that’s because you haven’t tried the award-winning ice cream which comes from Austria, say two cousins. Kolibri Eismanufaktur has existed since 1990. It was created is a small town of Wolfurt in the Austrian state of Vorarlberg, and since 2021, they’ve also had an outlet in Dositejeva Street in Belgrade.

For over three decades, they have been adhering to traditional recipes, and Bojana Miladinovic reveals where the secret lies:

– Consistency, Responsibility. Authenticity. At Kolibri, we have ice cream flavors which are made the same ways for nearly 33 years now. The consumers of our ice cream in Austria who grew up with Kolibri know this the best, and some have even visited our store in Belgrade and made sure of that consistency. We are responsible toward our products, the manner of production and further distribution and sales. We always try to create new flavors and thereby complement the Kolibri classics and delight our customers. They recognize and appreciate this and they often ask as soon as they enter our store – what’s new on the menu today?

Kolibri Eismanufaktur is a nice family story about two cousins and their desire to make this quality, tasty product available in Serbia as well, our interviewee adds:

– Katarina took over Kolibri in Austria 10 years ago and further spread it to eight outlets, but she always wanted the ice cream to which she had dedicated her life to be available in her father’s country of birth. That’s where I come into the story of Kolibri, in 2021, when, with the help of the husband and the family, we opened the production and sales outlet in Dositejeva Street.

Gelato Festival World Masters in Bologna pronounced Kolibri Eismanufaktur the best Austrian ice cream in July 2021. The combination of flavors was named “The Countess of the Alps”.

– “The Countess of the Alps” is an interesting combination of flavors which won over the jury at first taste. It consists of ricotta cheese, lime, mint and homemade strawberry sauce. The jury, and also the audience, love handcraft ice creams. They appreciate it when you put in the effort and the knowledge in a flavor. They also like to see and feel that you’ve put in the effort in every ingredient that you’ve included and that you’ve made it from fully natural ingredients, without the use of pastes or something similar. Here in Belgrade as well, “The Countess of the Alps” is one of the best-selling flavors and we try to have it on our menu very often – says Miladinovic.

When it comes to favorites, she says that their version of the Mozartkugel is the most popular and that it is an authentic Austrian flavor, “and also, who could resist that well-tested combination?”

– But they also like our ice creams made from basil, rosemary with pine nuts, they love our vegan flavors, flavors without sugar. Cherry Bonita (sour cherry yoghurt), Snikers, Mak, Cimet, Kokos have been Kolibri classics for over 30 years, and they are popular in Belgrade too. Ice creams made from elderberry, nettle, lemongrass are always in demand, and they are specific, because they can’t be made throughout the year. In the autumn, we make ice creams from pumpkins and chestnuts, and in the spring, we use apricots, watermelons, plums and plenty other things that can be found fresh in that season – our interviewee says.

For those who fast regularly, but also due to the increasing number of people who opt for a vegan diet, they are trying to expand their offer of milk-free ice creams.

– We always have various fruit ice creams or sorbets on our menu, but we also have milk ice creams which are vegan and can be eaten during a fast, because we put plant-based milks in them. Sour-cherry chocolate is our popular vegan flavor, and now we’ve also made a fast-ready Snickers-like ice cream, as well as an interesting ice cream made from tonka beans with blueberry sauce. Tonka beans are a spice from South America, whose aroma resembles a mix of almonds and vanilla. Walnuts, poppies and vanilla can also be used for making fast-ready ice creams – says Bojana Miladinovic.

She reveals that, in the coming period, the plan is to open another Kolibri store in Belgrade, as soon as a suitable location is found. They would also like to establish more cooperations with local producers.

– We are a manufacture and we believe that it is very nice to have mutual support with other producers. We are always up for cooperation with restaurants and cafes which want to have quality ice cream as part of their menus. Of course, new flavors, new creations, new combinations, are always being planned – says eKapija’s interviewee.
