Organic Chocolate Plant to Open in Belgrade – Chocollama Sole Producer of Chocolate from Raw Cocoa in Serbia, Using London Technology

Chocollama doo from Belgrade is to start producing organic raw chocolate in Belgrade. As owner Ana Stojicic says for eKapija, this is the only company in Serbia that produces certified organic raw chocolate.

According to her, the company was founded last summer. Their products can be found at well-stocked stores of healthy and organic food in Belgrade, and now, with the help of a credit from the Development Fund for the procurement of equipment, Chocollama is to make a step forward by opening a facility in the municipality of Zvezdara.

– The production starts in July and the capacities will be quite sufficient for our market and will be expanded per need – Ana says and adds that the company now has only one employee and that the plan is to employ one or two workers more.

Our interviewee explains what raw chocolate is:

– What makes our chocolate raw is that raw cocoa powder and cocoa butter produced from minimally treated beans are used in the production, so the product retains all the important nutrients that reduce the risk of cardiovascular diseases, strengthen the immune system, improve concentration and provide energy for everyday activities. In order to get an organic product with a unique flavor, we picked the best cocoa variety, Arriba Nacional. It comes from plantations in Ecuador, South America, and arrives to our workshop through our supplier, Just Superior. They deliver top-quality cocoa powder, known for its remarkable ability to save organisms from free radicals. In addition to cocoa powder, our chocolate contains Arriba Nacional cocoa butter and coconut sugar, and we also add Bourbon vanilla as a natural aroma.

Discussing the production process, Ana Stojcic says that Cocollama chocolate is produced manually, without additives, soy lecithins or refined sugar. She adds that the ingredients are ground on a mill which further improves the flavor, giving the chocolate a creamy texture and a slight hint of tropical fruit.

– We learned our craft in London. These chocolates have been present in their market for years, and we are now bringing the production technology to Belgrade and Serbia – Ana says and clarifies that their chocolate can be eaten while fasting and is vegan-friendly.

Our interviewee points out that, very soon, in addition to the dark chocolate which is already present in the health food stores, more kinds of chocolate enriched with freeze-dried fruit will become available, and there's also a plan to expand the sales through other channels and to start exporting.
