When love grows into work - Mamma's Biscuit House for 20 years among market leaders in manually made candies

The story of Mamma’s Biscuit House café-candy shop started in 1995. Sweets fans which have been with them know them as Stelina as well and they often use this name today as well.

They are trying to maintain reputation and quality which they were developing then by, as they say, "trying to keep the pace with time and align with family tradition."

Mamma’s Biscuit House is a true example of family business. Our collocutor, Marina Lazarevic, the Executive Manager of candy shop is the third generation which mixed her fingers into this sweet world.

- Our father started this business and he was in the banking world at that moment. Then, we were part of the Stelina candy shop chain. After a few years, we had our profiled buyers, the market was demanding more so we slowly started expanding our offer. Then we registered our own production inspired with mother’s cakes – Marina Lazarevic says at the beginning of her interview for eKapija and adds that cookie production tradition in their family is more than one hundred years old.

Mamma’s Biscuit House started producing small candies, piece cakes and when the market slowly accepted it, they started producing wedding cakes, kids’ and corporative cakes. Tendencies of an increased number of citizens started ordering cakes for their events instead of making them positively influenced business tendencies.

Clients recognize them for the fact that they use only top raw materials.

- We are trying to have the freshest raw materials possible. We use domestic raw materials as long as the quality is satisfied. Bambi is one of our biggest suppliers which makes us happy because products with plazma sell very well and people are strongly attached to that brand – our collocutor explains.

As for chocolate, Serbia is not so famous for its production so the head and a co-owner of Mamma’s Biscuit House says that as for now they buy all chocolate they can find through suppliers in our country but she believes they will soon have to start importing it since the ingredient often makes a distinction iin taste. At the moment, they supply from Puratos and Dolcefredo.

The sweetest pork in the world

When we stepped into a café-candy shop which the company has in the center of Belgrade, our attention was drawn by a shelf with cookies where the choice was difficult. Apart from the tastes we got used to wee in other shops, small cookies in the form of animals certainly set aside from the bunch and as if they shouted "taste me".

Our collocutor likes to say jokingly that it is” the sweetest pork in the world”. Although everybody thinks kids are our most common customers, still they make 40% of customers. These are cookies which guys often buy to their girlfriends and vice versa, then friends to friends, etc. Joy while giving to each other, stories and emotions while they are eating pigs is something that amazes our collocutor.

Tradition against trend

When it comes to tastes and recipes, they started from traditional cakes. The influence from abroad and tendency in the world is visible through cheesecake, chocolate mousse and tiramisu. Now they are facing a big challenge because if they want to introduce something new, they have to exclude an old candy.

- And then, a fight emerges since everybody defends his or her favorite cake. And, on the other hand, if one day we do not have “kapri” cake, that day it is the most wanted cake.

Since weddings are seasonal, the same goes with wedding cakes. They say that lately desert tables such as the ones at large, gala weddings we got used to see in the movies, are popular so Mammas organizes it as well.

When it comes to kids’ cakes, this workshop produces a true, little pieces of art.

- When they say they would like it to be cheaper at the price of less quality ingredients, we do not accept the order.

Among the best in Serbia

This year they got the award of the Serbian Chamber of Commerce “The best from Serbia” in the category of local brand.
- It encouraged us and after that inquiries from abroad increased – the Executive Manager at "Mamma’s Biscuit House" says.

Since they can produce much more than our market demands, they are thinking about export. They are working on expansion of distribution and market research so sweets fans from other countries can soon enjoy their products.

The fact that our collocutor is one of this year’s nominated ladies for the award “Flower of success for a woman- dragon” given by the Association of business women, proves family business is important for our economy and how candy production can be a good business move if managed properly.
